Jaces Butter Mochi

Recipe contains eggs and milk. Total time needed is a bit more than an hour.
The amounts are from an American recipe. I put the original amounts in parentheses after.

Ingredients

  • 500 gram glutinous rice flour (1 pound)
  • 500 gram sugar (2 1/2 cups)
  • 1 teaspoon baking powder
  • 113 gram melted butter (1/2 cup)
  • 700 mL whole milk (3 cups)
  • 5 eggs
  • 1 teaspoon vanilla extract
  • optional: 230 mL sweetened, flaked coconut

Directions

Step 1 (Prep work):
Gather all ingredients. Preheat oven to 175 degrees Celsius. Grease a 20 x 30 cm baking dish.

Step 2 (Mixing ingredients):
In a medium bowl, whisk together eggs, vanilla and milk.
In another larger bowl, stir together the rice flour, sugar and baking powder.
Pour the wet ingredients into the dry ingredients and stir to blend. Mix in the melted butter.
Optional: Mix in the coconut for some extra flavor.
Pour the mix into the prepared baking dish.

Step 3 (Baking):
Bake for 1 hour in the preheated oven.
Afterwards, let it cool completely, then cut into squares for serving.

Tips:

The coconut is for some extra flavour, but even without it, the mochi taste great!

If you don’t like greasing baking dishes, you can alternatively use a baking sheet in it instead. To make the sheet easier fixed inside the dish, wet the sheet beforehand.
